Mount Shadwell 150g

Mount Shadwell is a small volcanic mountain a few kilometres to the North of our factory in Mortlake, Western Victoria. The Mount Shadwell cheese is based on the Mousseron cheese originally developed by Christian Nicollet who operated a cheese factory in the Jura Mountains on the Swiss/French border. Christian visited Australia in 2013 and made some limited quantities of this cheese for Bruce and the overall result is a sweet nuttiness and an unusual combination of rich earthy notes. The Mount Shadwell cheese fits somewhere between Gruyere and Raclette but has a flavour and texture characteristics all of its own.

organic cheddar 200g

This cheese is produced according to traditional cheddar making techniques. It has a moist and creamy texture and a delicate yet full flavour. According to the cheese-makers, the organic milk produces a particularly sweet and clean tasting cheese. Our cheddar is matured for at least 6 months before being released and is made using vegetarian rennet. It makes a cracking cheese toastie, especially when combined with a good organic sourdough.

Our finest organic cheddar, aged around 6 months has been sent through the shredder for our customers’ convenience.   Packed in a convenient tub with a lid for resealing so it can keep longer. The perfect way to enjoy our shredded cheddar is in your sandwiches or toasties or even in a traditional macaroni cheese... enjoy the clumsy, gooey richness.

organic vintage cheddar 150g

We mature our regular cheddar for at least 6 months. Around this time, we hand select the best wheels of our cheddar and put them aside to age for a further six months. It has matured brilliantly and the first batches were released in December 2017.  Unlike a lot of mainstream vintage cheddars which are all tang and bite and not much else, this cheese is a subtle, but full flavoured cheddar with a lovely clean flavour. Holds its own on any after-dinner cheese platter.

Our parmesan has been matured more than 12 months to allow its flavour to fully develop. It has a traditional ‘grana’ texture and a clean, sweet, lingering flavour.  Inspired by the great Italian grana cheeses, our objective is to create an Australian parmesan that is up there with the best. Cheese maker Steve Interlandia learnt how to make traditional parmesan from his father John who was plying his craft as far back as 1958.

ORGANIC HALOUMI 200G

This cheese is produced at our new factory in Mortlake, Victoria.  Made with rich creamy milk from our farmers in Western Victoria this cheese is moderately salted and moist with a creamy texture.  With its high melting point it is delicious grilled on a frypan with olive oil and a squeeze of lemon on top.

ORGANIC mozzarella 250G

In response to consumer demand we launched organic mozzarella from our Mortlake factory in May 2021. To ensure we stayed true to its Italian heritage we enlisted the help of Fabio who has 35 years experience making mozzarella and previously made the only Australian organic mozzarella which was discontinued a few years ago. This cheese-making skill combined with the rich biodynamic/organic milk from our farmers in Western Victoria, has produced a traditional mozzarella ball which is soft, delicate and most importantly stretchy with subtle flavour and a creamy texture.

The cream is separated from our locally sourced organic milk and churned into butter at the factory in Camperdown, Western Victoria. The organic cows that supply the delicious milk are free to graze on lush pastures all day, all year round. Grass-fed butter contains five times more conjugated linoleic acid (CLA) than butter from grain-fed cows (J Dairy Sci. 1999 Oct;82(10):2146-56).
